VLANS / Trunks

Hi Sir,
We want to start implementing VLANS in our network, have separate VLANS for:
VLAN51 - EQUIPMENTS/DEVICES/SWITCHES/AP/PTP
VLAN52 - Residential Customers (PPPOE)
VLAN53 - Corporate Customers (Global IP)
Question 1: instead of defining all the above & future VLANS on the switches, can I select the check boxes and create trunk ports, then specify the above VLANS? e.g 51,52,53 Or do I have to specify all the above VLANS and then T, U, E ? Bcoz the second part is complicated to understand, I even went through some of your screenshots and explanations.
Question 2: At the moment all switches have default VLAN1, after I created the above VLANS on Mikrotik and specified different networks to them e.g 172.51.0.1/24, 172.52.0.1/24. Without creating or adding anything on the switches, I am able to ping these VLAN IP's from the customer CPE and also from all switches? How does it pass all the VLANS when I havent even made any changes on the switches?
Any inputs or assistance is highly appreciated.
