Attached is a plan I have a question about.
Can we Daisy Chain WS-6-MINI’s together to extend to 600 feet and then run 2 each (7.5 Watt cameras)?

I would say yes

Using 48VH from one switch to the next

Start off with our POE brick https://www.netonix.com/accessories/npoe-54v-80w.html

THe POE brick is 54V starting so your drop of the run will be more manageable
