I have a couple of Cambium AP's that appear to want 55 volts and 1.1 amps. Is this a power rating that the switch can support?

Our 48V and 48VH put out 50V
My guess is that voltage would be sufficient as all radios will down convert the voltage to usable voltages which is 3.3V, 1V, 1.5V, and so on.
More importantly you need to determine if the radio wants power on 2 pair (48V) or 4 pair (48VH)
Using 48VH on a device that is not meant to receive power on 4 pair can result in BAD THINGS HAPPENING.
Next you want to make sure of the PIN OUT Polarity.
Delivering the wrong polarity on the wrong PINs will result in REALLY BAD THINGS HAPPENING.
